- 750 ml. vino Cabernet sauvignon
- 5 zanahorias
- 1 morrón
- 5 dientes ajo
- 5-6 hongos champiñones - portobello (o más cantidad)
- 1 puerro
- 1 cebolla verdeo
- 1 lt. salsa tomate
- 4 hojas laurel
- Trocito rama romero
- Orégano, pimienta negra, paprika
- Sal
- Papel aluminio
- Olla o recipiente grande que pueda ir al horno

- En la olla ponemos la carne, el vino, todas las verduras en trozos, hongos, laurel y romero.



- Añadimos la salsa de tomate, todas las especias elegidas y sal a gusto. Yo puse 4 o 5 cucharaditas para que la carne agarrara bien. Por último cerramos con papel aluminio, dos o tres capas, para que quede muy sellado, ajustando bien en los bordes. Llevamos a horno precalentado y cocinamos por tres horas mínimo, a 250 grados sin abrir el horno ni el papel aluminio.



- Al cabo del tiempo retiramos con cuidado el papel aluminio.
Esta técnica permite que la carne y verduras se cocinen con el vapor que no escapa del recipiente dejando como resultado una carne sumamente tierna y que se desarma solo con el tenedor o la mano.
