- 4 rodajas merluzas o lomos sin espinas ni piel
- 250 g. langostinos o gambón congelados Hacendado
- 200 g almejas o carne de almejas congeladas Hacendado
- 1 cebolla y puerro

- 1 papa grande
- 1 ajo y pimienta molida
- Pulpa de ñora, o 1 ñora entera
- 2 cucharadita tomate concentrado (opcional)
- Aceite de oliva
- Sal y perejil
- Para el majado
- Ajo picado o molido
- Pan frito o picatostes
- Perejil fresco o molido
- 1 sobre azafrán
- 1 cucharadita pimentón dulce y picante
- Para el fumet rojo (o agua y 1 pastilla de pescado)
- Cabeza y espinas de la merluza
- Cabeza langostinos
- 1 zanahoria y ajo
- Hojas laurel
- Yo utilicé agua y una pastilla de pescado y los ingredientes los refreís. Ver más adelante
Steps to make to make Zarzuela de merluza y marisco
- Ingredientes

- Para hacer el fumet rojo, en una olla alta, echamos la cebolla, el puerro, la zanahoria, ajo, laurel, pimentón dulce, pulpa de ñora y concentrado de tomate, le añadimos las cabezas y espinas de la merluza, cubrimos con agua y cocer durante unos 20 minutos.
- En una cazuela honda, echar un poco de aceite y sofreír los ajos, la cebolla, perejil y el puerro (esta verdura puede ser fresca o congelada) todo muy picado. Añadir el tomate rallado sofreír un poco también todo junto.


- Preparamos mientras un majado de pan tostado o picatostes, ajo picado o molido, perejil fresco o molido, un sobre de azafrán, una cucharadita de pimentón dulce y la punta de pimentón picante.


- Pelamos y troceamos las patatas a chasquidos
- Añadir el majado y sofreír todo junto, añadir pulpa de ñora o una ñora entera, las patatas troceadas y la pastilla de caldo de pescado, remover todo muy bien y añadir unos 3 vasos de agua, dejar cocer a fuego mínimo tapado, durante unos 30 minutos.


- Limpiar bajo el grifo los lomos de merluzas, verificar que no tienen espinas, cortar en trozos grandes y salpimentar
- Pasado ese tiempo, sacar la ñora si es entera y, añadir las rodajas o lomos de merluza, los langostinos o gambón, las almejas o carne de almejas, dejar cocer unos 10 minutos a fuego suave.

- Probar que las patatas estén tiernas y rectificar de sal si es necesario, servir caliente.
