  3. 1 cebolla grande
  4. 1 cebolla verdeo
  5. Morrón pequeño

  8. 1 taza papa cortada en cubos
  9. 1-2 tazas caldo

  1. Comencé dando un hervor de 5 minutos a cada una de las verduras, usando el mismo agua, retirar y reservar. El tiempo de hervor, en mi caso que me gusta muy tierno me llevo casi dos horas al fuego mínimo, y lo saqué cuando lo pude cortar con el filo de una cuchara.
  2. Aparte saltear la cebolla en aceite hasta que transparente. Luego agregar verdeo y morrones y dejar cocinando.
  3. En mi caso usé 1 lata de tomates perita y otra de pulpa. Primero pique los tomates y los agregué a las cebollas. Aparte calentar el caldo (era casero pero se puede hacer con un cubo)
  4. Agregar el mondongo y las verduras blanqueadas y dejar cocinando muy lento unos 30 minutos. Esta cocción hace que tome cremosidad. Si te gusta más dulce colocar taza entera de zapallo. Colocar las arvejas.
  5. Unos 15 minutos antes de retirar colocar el rodajas del chorizo colorado (si es fresco) y si es seco colocar antes de servir. Además se le puede colocar la salsa picante ver receta "locro Carlitos".
