La segueza es una las comidas prehispánicas que aún se consumen y conservan en Oaxaca, regularmente se preparaba de miércoles a domingo, pues estos días es cuando se mataban los animales que le dan la carne a este platillo se preparaba haciendo con un caldo de res, puerco que se cocina con chile guajillo, ajo, comino, sal y pitiona.#tradicional

  2. 2 dientes ajo
  3. 1 pizca comino
  4. 1/2 cucharita sal
  5. Pitiona

  1. Lavar la carne y en la chilmolera poner los 2 dientes de ajo, el comino, la sal y molerlos.
  2. En olla agregaremos agua e integramos la mezcla de la chilmolera a la olla después, pondremos la carne.
  3. En lo que se cuece la carne en un comal tostamos el maíz y posteriormente se pasa al metate para molerlo.
  4. Después de molerlo se deja caer desde lo alto a un traste y se sopla suavemente eso nos ayudará a que se quite la cáscara del maíz y no quede en el guiso. De ahí dejaremos remojar el maíz en un poco de agua por 15 minutos
  5. Tostamos los 3 guajillos y después le quitaremos la colita y semillas. Tomaremos un poco de caldo de la carne y con eso licuaremos el guajillo.
  6. Lo pasamos por un colador y lo vaciamos en la cazuela con la carne al igual que el maíz que habíamos remojado
  7. Dejemos en el fuego hasta que el maíz se ablande agregaremos aproximadamente 4 hojas de pitiona, dejamos 5 minutos y lo apagamos. Y listo a ¡disfrutar!
