  1. 250 g tallarines de arroz
  2. 1/4 taza pulpa de tamarindo (o 5 cdas jarabe de tamarindo sin azúcar)

  6. c/n harina o maizena
  7. 8 camarones pelados y desvenados (opcional)

  10. 2 cdas azúcar (o jaggery o piloncillo claro)
  11. 2 cdas jugo de limón
  12. c/s aceite vegetal
  13. 1 cdita ajo picado
  14. 2 huevos
  15. 1 taza soya germinada
  16. 2 cebollas cambray (solo la parte verde, fileteada)
  17. 1 chile de árbol o serrano rebanado
  18. c/n cilantro
  19. c/n limón en cuartos

Instructions to make to make Pad Thai

  1. Remojar los tallarines de arroz en agua fría por lo menos 1 hora
  2. Remojar el tamarindo en el 1/4 taza de agua caliente por lo menos 15 minutos
  3. Rebanar el pollo en tiritas. Reservar.
  4. Cortar el tofu en cubos de 1.5 cm, pasar por la harina y freír. Reservar.
  5. Moler los cacahuates. (No demasiado, es preferible que tenga pedacitos a que se haga totalmente polvo) Reservar.
  6. Hacer un puré con el tamarindo remojado. Colarlo.
  7. Mezclar la pulpa de tamarindo con la salsa de pescado, el azúcar y el jugo de limón.
  8. Calentar 1/2 taza de aceite en el wok, hasta que esté empezando a humear. Agregar el ajo picado y freír 30 segundos. Agregar el pollo y freír 1 minuto.
  9. Agregar el tofu y los camarones, si se usan. Freír otro minuto.
  10. Agregar los huevos sin batir y freír de 1 a 2 minutos.
  11. Mientras se fríen los huevos, colar los tallarines. Agregarlos al wok y mezclar de forma envolvente. (Si hiciera falta, agregar más aceite.)
  12. Agregar la mezcla de tamarindo y freír 2 minutos más, moviendo.
  13. Agregar más o menos 2/3 de los cacahuates molidos y 2/3 de la soya germinada y toda la cebolla cambray. Freír 30 segundos, mezclando. Retirar del fuego.
  14. Transferir a un tazón (o tazones individuales)
  15. Espolvorear con el resto de los cacahuates y de la soya germinada. Decorar con rebanaditas de chile y hojas de cilantro fileteada, así como 1/4 de limón por porción.
  16. Servir inmediatamente.
